SUMMARY:

Sweet potato in Brazil is a great source of food and is sold mainly by retailers for the local market, however, due to the lack of a demanding public and little technology employed, large post-harvest losses are affected in this culture. As a result, it is necessary to adapt cultivars and bring alternatives for transportation and commercialization in distant markets, in order to reduce post-harvest losses and increase commercialization. Therefore, the objective was to study how the packaging used associated with the storage time helps in a better transport, in the sweet potato varieties, cultivars Amélia and Beauregard. The sweet potato cultivars were harvested in a multiplication field in the municipality of Macaíba, at the Agricultural School of Jundiaí (EAJ/UFRN). Vitamin C, Soluble Solids, Starch content, total phenolic compounds, Antioxidant capacity (DPPH and FRAP). The statistical design adopted was completely randomized, consisting of a 4x7 factorial arrangement, with 4 types of treatments (with TMJ, without TMJ, amélia and beuaregard); 7 storage periods (0, 7, and 14 days in refrigerated conditions at 5° C, and 17, 20, 23 and 26 days in room temperature conditions) totaling 28 treatments with four repetitions, each experimental unit was composed of a package of 500 grams of roots. The results were submitted to the Tukey test at 5% probability. Sweet potato varieties are influenced by the type of packaging and the type of storage for firmness and mass loss, reducing when subjected to packaging and refrigeration, regardless of the variety. For the visual appearance at room temperature, the BCE performs better. The chromaticity was higher with the ACE potatoes and the lowest values in the ASE. The starch content when the tubers were raw declined with increasing storage days, with smaller reductions in the refrigerated environment up to 14 days. After cooking, the starch also did not differ significantly during the 14 days in a refrigerated environment, but with 23 days in ambient conditions there was an increase from 0.05% (g/100 g) (0 days) to 3.47% (g/100 g) (23 days) on the starch content of BSE. Regarding SS, there was an increase for all treatments up to 20 days of storage at room temperature. The antioxidant activity of DPPH when the tubers were raw, remained stable in the refrigerated environment up to 14 days of storage. At room temperature there was a reduction in the antioxidant activity of DPPH with lower values for ACE (51.05%) and BCE (47.31%) at 17 days of storage. As for storage time, it is observed that the lowest activity was of the BSE variety (61.93%) at 23 days of storage. Regarding FRAP antioxidant activity, the Amélia variety was superior at 17 and 20 days of storage, with and without packaging. When the tubers were cooked, all treatments showed higher antioxidant activities with 20 days of storage at room temperature. The maximum amount of (FST) with raw and cooked tubers was observed in the Amelia variety. The ascorbic acid of the uncooked samples did not change significantly in the refrigerated environment for up to 14 days, however it was lower when stored for 17 days. The sweet potato variety BRS Beauregard showed better performance in the evaluated parameters, being an excellent option to commercialize references in distant markets.
